Cherry Manilow Smoothie with Vanilla Wafers, Almond & Honey

This smoothie was incredibly delicious! I must admit I ate some of the vanilla wafer cookies while making it. I hadn't had those cookies in a very long time, so I couldn't resist the temptation to eat them. I thought it was a bit odd adding cookies to a smoothie, but it was in fact a very good idea. Lime juice with cherries is surprising tasty. Almond extract was a wonderful addition and I need to pick some up from the store for some of our own smoothie creations. It only takes a little bit to sweeten the smoothie. While this recipe is labeled low calorie, it was very sweet and came in at 343 calories. I wouldn't label that low calorie, it was more of a dessert for me. It only took about five minutes to prepare in our Vitamix. I give this recipe five out of five stars! Poor Hubby was out of town so he didn't get to taste it.

French Cut Chicken Breast with Mozzarella, Pesto & Balsamic Reduction Caprese Salad

Any time a recipe is offered with pesto I purchase it since we love pesto sauce. Hubby gave this recipe five out of five stars, but from me it receives four. I didn't care of the spinach. Normally I love spinach, but this time I didn't. Tomatoes and mozzarella always taste good together. The addition of pesto sauce made it even more appetizing. All of the french cut chicken breasts they have sent us have been very moist and especially tasty. The Sicilian spice blend on them was fabulous. I wish I could get my hands on some more of that spice since it was so good. This recipe took about forty minutes to prepare and had 617 yummy calories.

Almond Crusted Mahi Mahi with Pinapple Dijon Sauce & Coconut Rice

I had high expectations for this recipe and it was a bit disappointing. While it looked extremely fancy and appetizing on the plate, we didn't care for the Hawaiian flavors. I guess we just don't like sweet flavors for dinner. While the pineapple flavor on the fish was good, the addition of the mustard made it taste odd. The almonds that coated the high quality mahi mahi were very tasty and made for a nice crunch. The asparagus was very fresh and flavorful. The rice was cooked with coconut milk and while we thought it would be delicious, we didn't care for it's flavor nor the smell while it was cooking. We both gave this recipe two out of five stars. It took about thirty-five minutes to cook and had 780 calories. It was a very generous portion, so much so that I shared some of the fish without the topping with our four dogs.

Mushroom & Swiss Beef Burger with Black Truffle Mayo & Steak Fries

We had this recipe before and gave it five out of five stars, so when I saw it as one of the choices I immediately ordered it. The pretzel buns were again of a high quality which is important to me since I try to limit how much bread I eat, so I only want the best. They tasted as good as they smelled. Arugula is a nice change from lettuce on a burger and the truffle mayo is to die for! Amazing how just a bit of truffle oil can transform boring mayo into a fancy and scrumptious topping for your burger. No more boring burgers! The potatoes were huge, so I shared many of my fries with our four dogs. Hubby could have cooked them longer so they were more attractive, but I really like soggy fries over crunchy. This recipe took about thirty minutes to cook and had 1310 calories. While it's certainly not low in calories, it makes for a wonderful treat.

This was another enjoyable box of food from Home Chef! Only one was a disappointment and the other three were five stars from Hubby and I gave two recipes five stars and one four stars. The fruit basket was ripe and ready to eat when it arrived. It included one pink grapefruit, two oranges, two Golden Delicious Apples, two Pink Lady Apples and two Australian tangerines. All of them were very fresh and delicious.
