This is a review of our 2nd shipment from a food subscription company called Sun Basket. This week our favorite recipe was the Scrambled Eggs with Tomato Basil Salsa, we gave it five out of five stars. Out of the four recipes, we gave one recipe five out of five stars, two recipes four stars and one recipe three stars. Calories ranged from 150 to 640.

Strawberry Mint Smoothie

We gave this recipe four out of five stars. Included in this recipe were strawberries, fresh mint, coconut milk, greek yogurt, vanilla maple syrup, ice and chia seeds. It has only 150 calories which was lower than it tasted. It tasted like dessert and it was scrumptious. It's the perfect recipe for your sweet tooth without so many calories and fat! Hubby added half of the mint since we prefer less mint in our smoothies. The ingredients arrived in good shape. It took about seven minutes to prepare. This recipe provided two full glasses of smoothie deliciousness. 

Scrambled Eggs with Tomato Basil Salsa

We absolutely loved this recipe and plan to make it again soon. We gave it five out of five stars. If you have basil and tomatoes growing in your garden, this is the perfect recipe for you. When we grew those two crops we were always on the hunt for a recipe that would use them. The ingredients arrived in good shape and the eggs were of the highest quality I've eaten. So very tasty! We added some bacon and english muffins with jam to this meal since we were really hungry and tend to eat more for breakfast on the weekends. The eggs and salsa alone would be a great weekday meal. You could even prepare the Tomato Basil Salsa the night prior to reduce prep time in the morning. This recipe had 220 calories and it took about ten minutes to prepare. Two eggs per person is a healthy portion with no leftovers.

Seared Steak with Charred Tomatoes & Basil Walnut Dressing

We gave this recipe four out of five stars. It would have received five out of five stars if snap peas had not been included since we aren't fans of this vegetable.  We left out the snap peas for that reason. The harissa powder, chives and olive oil made for a simple yet delicious topping for the steak. The walnuts, lemon juice, basil, salt and pepper added to the squash and tomatoes were surprisingly yummy. We'll have to remember that simple recipe to liven up our veggies in the future. I appreciate that the sirloin steak they sent is antibiotic and hormone free. This one had only 540 calories yet it tasted like more than that, so it's the perfect low calorie recipe. It took about thirty-five minutes to prepare. This one was a healthy portion with no leftovers.

White Bean & Ricotta Flatbreads with Basil

This was our least favorite recipe and we gave it three out of five stars. We both prefer non vegetarian meals mostly. This one had an earthy taste that you may expect from a vegetarian meal. The flatbread was too thin for our liking. Hubby enjoyed the combination of the pine nuts, basil, ricotta, garlic, thyme, lemon and the onions that topped the pizza. I'm not a big fan of pine nuts, so it wasn't my cup of tea. I enjoyed the salad and the dressing was delicious. The basil vinaigrette was made with basil, lemon juice, olive oil, salt and pepper. Sounds too simple to be tasty, but I assure you it was. This recipe had 640 calories which surprises me, it seems too high. There was more pizza than I could eat, so it was a generous portion.

We enjoyed these recipes during the 4th of July holiday. Since we were busy, we really appreciated that these recipes didn't take too much time to prepare so we could get back to our festivities.
