This is a review of a weekly food subscription box called Sun Basket. We gave two recipes five out of five stars and two recipes four stars. Calories ranged from 330 to 650 and preparation time ranged from five minutes to an hour. Two recipes are gluten free, one is paleo and two are vegetarian.

Salmon with Yogurt Dill Sauce & Mint Cilantro Rice

Hubby gave this recipe five out of five stars and I gave it four stars. I really appreciate that they only send us wild caught seafood and not farm raised. The Fish People seafood packages even have numbers on it that can be looked up on their website to tell you who caught the fish! Click here to learn about the salmon they sent us. Their seafood always arrives fresh and tastes delicious. The dill sauce on the salmon made with yogurt, dill, lemon juice, lemon zest and salt was scrumptious. The addition of capers, cilantro, fried shallots and mint to the rice was really tasty. The swiss chard was delicious also. This scrumptious recipe only had 580 calories and it took forty-five minutes to prepare. It was a nice sized portion of food and gluten free.

We both gave this recipe four out of five stars. The beef skewers tasted like dumplings without the wrapper, so very tasty. The side salad made with cabbage, lime juice, mandarins and Asian pears topped with sesame dressing was scrumptious. It would make for the perfect summer salad. It only had 650 calories and it's a paleo and gluten free recipe. It took and hour to prepare. It was the perfect healthy sized portion. The pork shown in the photo above was for a different recipe, I made a mistake. They sent us ground beef.

New England Overnight Oats

For the price of one dinner they send two breakfasts, so when I see a breakfast recipe that I fancy I'm sure to order it. I tend to skip breakfast since I'm so bored with the same old thing, so their breakfast recipes are super helpful. I enjoy oatmeal and I really appreciate the overnight oatmeal recipes since they are made in advance. I gave this one five stars and that's not a easy task for a oatmeal recipe! This one was super delightful since it tasted like an oatmeal cookie! I added one packet of Stevia since I like my oatmeal on the sweet side. Stevia doesn't mix well so it's best to add it right away into the liquid and stir well. The next morning I stirred it since the cinnamon rose to top. Then I warmed it in the microwave for one minute, stirred again and sprinkled the almonds on top. This vegetarian meal has 400 calories and it's very filing. It only took five minutes to prepare. I ate the second portion the next day since I couldn't share it with Hubby due to him being out of town.

Spinach Feta Scramble

I gave this recipe four out of five stars. I appreciate that they only send pasture raised organic brown eggs. The addition of oregano was a wonderful. It was a very easy and fast recipe to prepare. It took me twenty-three minutes to prepare, mind you that includes washing the pan and stovetop. This 330 calorie vegetarian recipe was filling and delicious.

It was another delightful week of recipes from Sun Basket and everything arrived in great shape even in this cold weather we have been having.
